For summer 2026, the Hotel Funivie restaurant will be renovated and become La Tavola alle Funivie: an à la carte offering designed for those seeking quality, simplicity, and a welcoming atmosphere.
It's a natural evolution: the same values as always (hospitality and attention), with an even more free and contemporary cuisine, without formalities.

Winemaking:alcoholic fermentation in white in thermo-conditioned stainless steel containers.

Winemaking: Symbolizing the rebellious nature of its creators, the wine combines tradition and innovation, expressing the extraordinary quality of the selected Moselle vineyards.

Bouquet: of ripe fruit with distinctive hints of apple and pear.
Taste: stands out for its elegant acidity, which perfectly balances its residual sugars.

Winemaking Slow fermentation at controlled temperature in steel tanks
Alcohol: 13.5% vol.
Bouquet Typical aroma of rose, tropical fruits and nutmeg
Taste: Pleasant acidity, good body and aromatic finish.
Name: Trentino DOC Superiore Cembra Valley.
Winemaking: in stainless steel tanks. Further refinement in the bottle follows for several months.
Alcohol: 12.5% vol.
Taste: hints of aromatic herbs, elderberry, tropical fruit, and citrus. Savory, mineral, with a pleasant acidity.
Winemaking for Fermentation in stainless steel tank
Refinement: Maturation in stainless steel tanks for 7 months.
Bottling: 15,000 bottles by March 2026
Alcohol: 12.5% vol.
Bouquet: complex with notes of green apple and an exotic touch with mango.
Taste: dry, elegant with mineral and salty notes, stimulating and fresh with a juicy finish
Winemaking fermentation in stainless steel tanks. Refinement: Maturation in stainless steel tanks for 7 months.
Bottling: 25,000 bottles by March 2026.

Bouquet: elegant, aromatic notes of gooseberry, elderflower and peaches.
Taste: juicy and dry structure, mineral notes with hints of tropical fruit.

Alcohol: 13.5% Vol.
Bouquet: fragrant, fresh and with a touch of minerality.
Taste: Typical hints of citrus, apple, and hay prevail. The taste is balanced, fresh, and easy to drink.
Rosé Wines
Winemaking:fermentation in steel, bloodletting method
Refinement: aged in steel for 5 months
Bottling: 3,000 bottles by March 2026
Alcohol: 12.0% vol.
Bouquet: intense aromas of strawberries and raspberries, subtle spicy notes of thyme
and oregano, a hint of rose petals
Taste:fresh and fruity, lively acidity, strong structure,
captivating fullness and pleasant drinkability
Winemaking This is followed by cold maceration in the press for several hours, followed by pressing. Fermentation takes place partly in temperature-controlled stainless steel tanks and partly in barriques, where it matures for approximately a year. Further bottle aging follows.
Alcohol: 13% vol.
Bouquet On the nose it has sweet fruity hints and a light note of vanilla.
Taste The taste is rich, full, structured and smooth.
Red Wines
Winemaking Fermentation takes place with maceration of the skins in temperature-controlled stainless steel containers.
Alcohol: 14% vol.
Bouquet: intense, fruity, accompanied by hints of red fruit and small black fruits
Taste: intense, very pleasant for the fruity notes.
Winemaking The grapes, harvested after mid-September, after pressing remain in contact with the skins for approximately 7-10 days.
The wine is aged in barriques and large oak barrels.
Name Trentino DOC
Alcohol: 13.00% vol.
Bouquet: Intense, pleasantly fruity aroma with a typical herbaceous note.
Taste: Dry, full-bodied flavour with good structure, elegant and full-bodied.
Winemaking Manual work in the vineyard, with a late harvest. Partial drying of the grapes, with the wines blended after natural decantation.
Name Marzemino Trentino DOC
Alcohol: 13% vol.
Bouquet: characteristic scent of violet
Taste: persistent, savoury and balanced flavour.
Winemaking:4 months, 30% in "tonneaux". in Glass: 3 months.
Name: DOCG Chianti
Alcohol: 14% Vol.
Bouquet: Blackberry, spices, white pepper, juniper and black tea
Taste Elegant, structured, woody, licorice, red fruits in alcohol. Balanced and persistent finish.
Winemaking:traditional alcoholic fermentation in steel tanks, aged in oak barrels and subsequently in the bottle.
Name Alto Adige DOC
Alcohol:13.0% vol.
Bouquet: fruity with hints of black cherry and plum, floral, spicy and mineral with typical cocoa notes
Taste: velvety accompanied by the typical acidity of Lagrein
Winemaking: cross between Merlot and Teroldego.
Refinement: 24 months in barrique
Maturation: 12 months in bottle

Bouquet:spicy, wild berries
Taste:velvety, delicate, black cherry and currant
Winemaking Fermentation in wood with maceration for 10-15 days
Refinement:6-12 months in wood
Name Trentino DOC
Alcohol: 14% vol.
Bouquet: Blackberries, blueberries, wild berries, spices and light chalky notes
Taste Majestic, pleasantly tannic, pleasantly bitter and full-bodied, with a slender freshness and a pleasant flavour.
Winemaking Cold maceration for 3 days, first spontaneous fermentation in steel tanks, malolactic fermentation and subsequent refinement in barrique for 12 months
Name: Alto Adige Pinot Noir Riserva DOC 2023
Alcohol: 13.5% Vol.
Bouquet Hints of fresh raspberries and wild cherries give the fruity sweetness a juicy and delicately spicy character.
Taste On the palate it is velvety and extraordinarily elegant.
Sparkling Wines - Trento DOC
Winemaking White winemaking with soft pressing of the grapes and fermentation of the must in steel. In spring, the wine undergoes a slow secondary fermentation and then rests on the lees for at least 30 months. This is followed by riddling and disgorging with the addition of liqueur d'expédition.
Alcohol: 12.50% vol.
Bouquet: intense and varied aromatic, with hints of white-fleshed fruit, citrus, floral notes and a light touch of bread crust
Taste: its acidity is lively but well-balanced, blending harmoniously with a creamy sensation and persistent freshness.
Winemaking Classic Method: The grapes are gently pressed and the resulting must ferments in stainless steel tanks at a controlled temperature. This is followed by a period of aging on the lees for at least 36 months, allowing the wine to develop complexity and a richer bouquet.
Grape variety:Pinot Noir, Chardonnay, Pinot Blanc
Alcohol: 12.5%
Bouquet: fine and persistent perlage, with notes of fresh bread, white-fleshed fruit such as peach and pear, and nuances of toasted almond that are gracefully enriched with mineral tones.
Winemaking: Obtained from 100% Pinot Noir grapes grown on volcanic soil.
Classic method after pressing, the foam ages on the yeasts for 15 months.
It is then topped up with Pinot Noir.
Alcohol: 13% vol.
Bouquet: Red fruits, flowers, bread crust, minerality
Taste: Dry, fresh, savoury, mineral and persistent.
Color: Bright yellow.
Perlage: Fine and persistent.
Variety: 100% Chardonnay.
Refinement: 48 months in bottle.
Serving temperature: 6/8° C.
Perfume: Refined, intense and fruity with aromas of ripe yellow peach, candied orange and brioche bread which blend well with light notes of wood and light hints of yeast.
Dekatos It is a Classic Method with a long stay on the lees for over one hundred months to characterize and chisel a unique style.

Light, Fresh, Aromatic
An elegant and harmonious vintage Prosecco, it is characterized by a fine and persistent perlage. Pale straw yellow in color with greenish highlights. The nose is clean, with notes of ripe white peach and wisteria. On the palate, it expresses excellent structure and aromatic character. The aftertaste is long and persistent.
